  1. Prepare 1 (14 oz) can or 1-1/2 c cooked white beans
  2. Get 1 (14 oz) can of diced tomatoes
  3. Get 12 oz uncooked penne or strozzapreti pasta, cooked
  4. Make ready 6-10 oz fresh baby spinach, rinsed and stem removed
  5. Take 1/2 (14 oz) can of vegetable broth
  6. Take 1-2 tbsp olive oil
  7. Take 2 tsp minced garlic
  8. Make ready 1 tsp chopped fresh rosemary
  9. Get 1/2 tsp red pepper flakes or Aleppo pepper
  10. Make ready 1 tsp balsamic vinegar
  11. Get 1/2 tsp sea salt
  12. Make ready Grated vegan or traditional Parmesan cheese

Meanwhile, in a large nonstick skillet, saute the peppers, onion and mushrooms in oil until tender. Stir in the vinegar, sugar, salt, basil and pepper. Drain pasta; add to vegetables and toss to coat. So I mixed the flour, salt, egg and water as usual to make the dough.

Instructions to make Tricolori Pasta:
  1. Heat olive oil in a large saute pan. Saute garlic 1-2 minutes. Add tomatoes and simmer 8 minutes. Add beans and spinach. Saute another 8-10 minutes.
  2. Add rosemary, pepper, balsamic vinegar, salt and 1/4 c of vegetable broth. Simmer 5-10 minutes.
  3. Add cooked pasta and simmer covered until flavors blend. Add rest of vegetable broth if needed.
  4. Serve with vegan parmesan cheese.
