The ingredients needed to make Layered Pasta Bake:
  1. Get 16 oz long pasta (like spaghetti, linguine, etc)
  2. Take 2 eggs
  3. Make ready 1 (16 oz) container cottage cheese
  4. Take 1/4 cup shredded parmesan
  5. Take 1 tbs dried parsley flakes
  6. Make ready 1 tsp dried oregano
  7. Make ready 1/2 tsp onion powder
  8. Get 1/2 tsp garlic powder
  9. Make ready 1/2 tsp salt
  10. Get 1/4 tsp pepper
  11. Get 4 cups spaghetti sauce (any variety)
  12. Take 1 1/2 cups shredded mozzarella
  13. Prepare extra salt for pasta water

While pasta cooks: In a large bowl beat eggs. My layered pasta bake is a twist on a classic lasagna but even easier to put together! It's got traditional ricotta, mozzarella, and marinara sauce. However, I've substituted penne for the lasagna noodles, and ground turkey for the beef.

Instructions to make Layered Pasta Bake:
  1. Preheat oven to 375°F. Spray a 2 quart casserole dish with olive oil cooking spray. Set aside.
  2. Bring a large pot of generously salted water to a boil. Add pasta. Boil for 8 minutes.
  3. While pasta cooks: In a large bowl beat eggs. Add cottage cheese, parmesan, parsley, oregano, onion powder, garlic powder, salt, and pepper. Stir together until well combined.
  4. When pasta is done carefully drain using a colander. Add pasta to cottage cheese mixture. Stir to fully coat pasta with mixture.
  5. Place half the pasta in the casserole dish. Spread half the spaghetti sauce in an even layer over the pasta. Repeat with remaining pasta and sauce. Sprinkle mozzarella evenly over the top.
  6. Bake covered for 30 minutes. Uncover and bake 15 minutes more. Let rest 10 minutes before serving.

It's got traditional ricotta, mozzarella, and marinara sauce. However, I've substituted penne for the lasagna noodles, and ground turkey for the beef. Plus, we added some mushrooms for good measure.
