  1. Get 3 kg chicken thighs
  2. Prepare 4 clove garlic
  3. Make ready 1/3 bunch of parsley
  4. Make ready 1/4 cup greek oregano

  6. Make ready 1 tsp paprika
  7. Prepare 1 tbsp cracked pepper
  8. Get 1/4 cup olive oil, extra virgin
  9. Prepare 1 salt

Instructions to make Greek style chicken:
  1. Preferably the night before get all ingredients except thighs and salt and put in blender to make make a marinade
  2. Now take thighs and put in plastic bag with marinade and leave overnight in fridge
  3. Get charcoal spit going.
  4. Now take the thighs and individually salt them on 1 side putting it on the spit rod so the unsalted side is in contact with salted side
  5. While turning sprinkle a little more salt and squeeze lemon over. This should take 2 - 2 1/2 hours. Simply use electric knife to cut chunks off and serve with salad, pitas and tzatziki. Enjoy
  6. If you dont have a spit the chicken can be cooked on a grill
