  1. Take 1/2 cup boiled rice
  2. Prepare 1 chicken breast cut into small pieces
  3. Get 1 onion chopped into small squares
  4. Take 3 cloves garlic chopped
  5. Take 1 tbsp oil
  6. Take 2 tbsp chopped parsley
  7. Make ready 2 tbsp chopped coriander
  8. Get 1/4 cup chopped mushrooms
  9. Get to taste salt
  10. Get to taste black pepper
  11. Prepare 1 green chilli chopped
  12. Get 1 tbsp flour heaped
  13. Make ready 3/4 cup milk
  14. Take 1/4 cup mozzarella cheese shredded
  15. Take 2 tbsp parmesan cheese
  16. Prepare 3 large potatoes boiled
  17. Prepare 1 tbsp oregano
  18. Take 2 eggs whisked
  19. Get bread crumbs
  20. Take oil for deep frying

Steps to make Rice balls:
  1. In a skillet using the 1tbsp oil, fry the onions and garlic until the onions are transparent.
  2. Add chicken pieces. Add salt, pepper, chilli, parsley, coriander and mushrooms to the chicken and let it cook until the chicken is cooked through
  3. Add flour and milk and stir well so flour does not clump. Allow it to cook until it is no longer liquidy. Mix in mozzarella and parmesan
  4. Fold the chicken into the boiled rice and allow it to cool
  5. Peel and mash the potatoes. Add some salt, black pepper and oregano.
  6. Make small balls out of the rice mixture. Coat them in the mashed potatoes. Dip in egg and roll in bread crumbs. Deep fry the balls.

Gently press the rice to shape into a triangle. Thoroughly mix the rice and eggs together in a separate bowl. Add the dry ingredients to the rice and egg mixture. Sprinkle with powdered sugar and serve while hot. Other variations are to serve with honey.
