  1. Prepare 500 grams corkscrew or bowtie pasta
  2. Take 1/2 lb baby spinach, washed and dried
  3. Make ready 1 pints cherry tomatoes, cut into halves
  4. Get 1/2 large onion, chopped
  5. Get 1 red pepper, chopped (optional)
  6. Prepare 400 grams feta cheese, cut into bite-sized cubes
  7. Make ready Dressing
  8. Get 3/4 cup oil (1/2 canola, 1/2 extra virgin olive oil)
  9. Make ready 1/3 cup red wine vinegar
  10. Prepare 2 tbsp lemon juice
  11. Get 4 clove garlic, minced
  12. Make ready 1 dash pepper
  13. Prepare 1/2 tsp salt
  14. Make ready 1 tbsp oregano

Steps to make Greek Pasta Casserole:
  1. Preheat oven to 350°F.
  2. Boil pasta al dante according to package directions.
  3. As the pasta is boiling, prepare dressing. I just add the ingredients into a large measuring cup.
  4. Add the onion, red pepper and cut cherry tomatoes into a large saucepan. Add approximately 1/3 of the dressing (it acts as the oil). Cook on medium heat until onions are translucent, stirring occasionally.
  5. Add another 1/3 of the dressing into the pan. Add the spinach. I add the spinach a handful at a time until it wilts, otherwise it might not all fir into the pan at once.
  6. Once all the spinach has wilted, mix the contents of the pan with the cooked pasta in a large casserole dish. Add the remaining dressing and the feta cheese. Mix well.
  7. Bake covered for 20-30 minutes.

Some add more cheese to the béchamel, but I don't find the need to. Heat oil in a large, heavy-bottomed pot over medium-high heat. Make the meat sauce: Heat a deep pan over high heat and add the oil and the minced beef. Let it brown, without stirring, and when the meat is no longer red, stir with a wooden spatula and break any meat lumps. Cook until all the juices have evaporated, reduce heat to medium/high and add the onion the carrot, the bay leaves, the cinnamon stick, the allspice and the cloves.
