  3. Make ready 1 Rose Mary
  4. Get 3 each eggs
  5. Prepare 1 Rice
  6. Take 1 Pepper
  7. Get 1 Salt
  8. Get 2 tbsp Sweet basil
  9. Make ready 1 can Chicken stock
  10. Get Soup
  11. Prepare 1 1/2 gallon Chicken stock
  12. Make ready 1 box Spinach
  13. Take 1 each Red Onion
  14. Get 1 Cerlery
  15. Get 1 Chicken Stock
  16. Get 1 box fuculli pasta

This recipe is a knock-off of the traditional Italian wedding soup. Interestingly enough, the original dish of fame is not served at weddings at all; the name refers to the marriage of greens and meat in a clear broth. Here, substituting shrimp balls for the traditional ground beef meatballs makes it a healthy alternative. Using canned broth makes this a very quick and filling dinner entree.

Steps to make Greek Wedding Soup:
  1. Mix all ingredients for meatballs. And roll out 1 to 2 oz balls
  2. Place meat balls on a flat pan and bake until done. 350°F for 14 min.
  3. While Meatballs are cooking start your soup with Chopped red onion, chopped cerlery, salt and peper and cook down until soft.
  4. Start your paasta in a separte pot and cook until almost done drain and set on side.
  5. Add Chicken stock to your Cerlery and red onion. Add spinach. Cook until spinach has broken down.
  6. Add meatballs and pasta and cook for 10 min. - - And Serve.
