The ingredients needed to make Lasagna Soup:
  1. Prepare 1 lb hot sausage
  2. Get 1 lb ground beef
  3. Get 2 small yellow onions, chopped
  4. Take 4 cloves garlic
  5. Get 6 oz tomato paste
  6. Prepare 6-8 oz Mafalda Pasta (or pasta of your choice)
  7. Get 2 (14.5 oz) cans Diced Tomatoes (I used Italian Style), drained
  8. Take 8 cups chicken broth
  9. Take Italian Seasoning (I used Oregano)
  10. Prepare Crushed Red Pepper Flakes
  11. Get Salt
  12. Take Black Pepper
  13. Prepare Garlic Pepper (optional)
  14. Prepare Onion Powder (optional)
  15. Make ready Cheese Topping
  16. Prepare 8 oz Ricotta cheese
  17. Prepare 2 oz parmesan cheese
  18. Take 2 oz shredded Mozzarella

Pour in beef broth, diced tomatoes, crushed tomatoes, and wine. Stir in basil sprigs, salt, and pepper. Pour in chicken broth and bring to a simmer. Add lasagna noodles and cook, stirring.

Instructions to make Lasagna Soup:
  1. In a large soup pot sautee the onions & garlic. Add ground beef and sausage, season well with seasonings.
  2. When meat is cooked (drain, if needed) add diced tomatoes, tomato paste, & chicken broth. Turn to high heat until simmering.
  3. Once simmering add pasta and turn heat down to medium. Stir and simmer until noodles are soft, about 8-10 minutes.
  4. Taste the broth!! Add seasonings as needed.
  5. In a separate bowl add cheese ingredients and mix well.
  6. Add cheese mixture to individual bowls, not the pot itself. Enjoy!
