The ingredients needed to make Taco Casserole (Instant Pot):
  1. Get 1 White Onion, diced
  2. Make ready 28 oz. Canned Diced Tomatoes (Fire Roasted are the best!)
  3. Prepare 6 oz. Canned Diced Green Chilies
  4. Make ready 1 3/4 Roasted Red Bell Pepper
  5. Get 2 cups Chicken Broth
  6. Make ready 1 tsp Garlic, minced
  7. Get 3 Tbsp Chili Powder
  8. Make ready 2 tsp Ground Cumin
  9. Take 1 tsp Dried Oregano
  10. Get 1/2 tsp Salt
  11. Make ready 1/4 tsp Black Pepper
  12. Make ready 32-48 oz. Ground Beef, frozen
  13. Prepare 12 oz. Wide Egg Noodles
  14. Make ready Shredded Cheese, Mexican Blend (Cheddar, Oaxaca, & Asadero)

Turn the Instant Pot to SAUTE and when the display reads HOT, add the oil. Add the ground meat, onion, and salt. Add the red bell pepper, green bell pepper, black beans, corn, chili powder, cumin, and garlic powder to the pot and stir to combine. Add ground beef to instant pot or other pressure cooker and set to the "saute" function.

Steps to make Taco Casserole (Instant Pot):
  1. Add onion, diced tomatoes, diced green chilies, roasted red bell pepper, chicken broth, minced garlic, chili powder, ground cumin, dried oregano, salt, and ground black pepper to the Instant Pot.
  2. Stir until combined.
  3. Put trivet into pot and place frozen ground beef atop it.
  4. Close & lock the lid, turning the steam release handle to seal the valve.
  5. Press PRESSURE COOK—Normal; Pressure Level: High; Time: 15 minutes
  6. Push steam release handle down for Quick Release.
  7. Break up ground beef & remove trivet.
  8. Add egg noodles to the pot.
  9. Close & lock the lid, turning the steam release handle to seal the valve.
  10. Press PRESSURE COOK—Normal; Pressure Level: High; Time: 4 minutes
  11. Push steam release handle down for Quick Release.
  12. Press Cancel (Keep Warm: On)
  13. Stir well.
  14. Serve hot topped with Mexican blend shredded cheeses.

Add the red bell pepper, green bell pepper, black beans, corn, chili powder, cumin, and garlic powder to the pot and stir to combine. Add ground beef to instant pot or other pressure cooker and set to the "saute" function. Sprinkle meat with taco seasoning and add salsa, stir to coat. This casserole is perfect for Taco Tuesday!
