  1. Get 1 lb. Italian Sausage (I used Jimmy Dean-original)
  2. Prepare 1 small onion, chopped
  3. Get 2 cloves garlic, minced
  4. Get 3 Tbsp. tomato paste
  5. Prepare 1 (28 oz.) Large can diced tomatoes
  6. Take 2 tsp. Italian seasoning
  7. Get 1 tsp. dried basil
  8. Make ready 6 cups chicken stock or broth
  9. Prepare 1 lb. dry spiral pasta, like rotini
  10. Get 1 (15 oz.) container Ricotta cheese
  11. Take 1/2 cup grated parmesan cheese
  12. Get 1 cup shredded mozzarella cheese - for topping

Fill tomato paste can with water and pour in; mix well. Pour in beef broth, diced tomatoes, crushed tomatoes, and wine. Stir in basil sprigs, salt, and pepper. Pour in chicken broth and bring to a simmer.

Instructions to make Lasagna Soup:
  1. Place sausage in large pot along with chopped onion and garlic. Add in Italian seasoning.
  2. Cook over medium high heat until cooked through; drain and return to pot.
  3. Add in chicken stock, tomato paste and can of tomatoes. Bring to a boil.
  4. Once boiling, add in pasta. Reduce heat to medium low and simmer uncovered for 15 minutes.
  5. Once pasta is thoroughly cooked it is ready to be served.
  6. For ricotta topping: mix ricotta cheese, parmesan cheese and basil together in a small bowl.
  7. Place soup in bowl and top with desired amount of mozzarella cheese and ricotta cheese. Enjoy!
