  1. Prepare 2 cup zucchini squeezed
  2. Get 2 eggs
  3. Take 1/4 teaspoon each salt pepper turmeric garlic powder onion powder
  4. Prepare 1/2 teaspoon vinegar
  5. Get 1/2 cup chopped chives
  6. Take 2 tablespoon oatmeal flour
  7. Make ready 1/4 cup oatmeal quick cook
  8. Prepare 1/2 cup cheese

Instructions to make Zucchini Pancake:
  1. Mix all ingredients let it rest for 10 minutes
  2. Over medium heat grill I scoop 1/3 cup of mixture cook each side 3 minutes

In a bowl, mix egg, cheese, baking mix and pepper. Lightly coat a large skillet or griddle with nonstick cooking spray. Place heaping tablespoons of zucchini batter in pan several inches apart, allowing room to spread. Wash and shred zucchini on a fine shredder (DO NOT PEEL).
