The ingredients needed to make PB Cup Oatmeal Pancakes:
  1. Get 2 Eggs
  2. Get 1/3 C. Greek Yogurt
  3. Get 1/4 tsp. Baking Powder
  4. Take 1 1/2 Tbs. Peanut Butter, creamy
  5. Take 1 C. Quick Oats
  6. Prepare 3 Tbs. Semi-Sweet Chocolate Chips
  7. Get 1/4 tsp. Coconut Oil

Add yogurt and baking powder, whisk together. Combine oats, flour, baking soda, sugar, and salt in a large bowl. Beat all ingredients except Peanut Butter Spread with hand beater until smooth. To test griddle, sprinkle with a few drops of water.

Steps to make PB Cup Oatmeal Pancakes:
  1. In a large bowl, whisk the 2 eggs. Add yogurt and baking powder, whisk together.
  2. In a small dish, place 1 Tbs. of peanut butter and microwave for 10-15 seconds, then add to the egg/yogurt mixture and whisk to combine thoroughly.
  3. Then stir in oats and 2 Tbs. of the chocolate chips.
  4. Heat skillet on medium heat, place a spoonful or two of battery in pan, form into a pancake shape. Cook about 2 min. on each side.
  5. In a small dish add remaining ½ Tbs. peanut butter, 1 Tbs. chocolate chips and the coconut oil. Heat in the microwave at 10-15 second intervals, stirring until melted, combined and smooth.
  6. Drizzle chocolate sauce over pancakes as a topping.

Beat all ingredients except Peanut Butter Spread with hand beater until smooth. To test griddle, sprinkle with a few drops of water. If bubbles skitter around, heat is just right. Flip the pancakes when they firm up around the edges and start to bubble. Serve pancakes topped with butter and drizzled with maple syrup.
