  1. Take 1/2 cucumber; shredded
  2. Prepare 1 garlic clove; minced
  3. Get 1.5-2 cups plain yogurt
  4. Prepare Squeeze half a lemon
  5. Get 2 tbsp minced cilantro

To be truly superb, tzatziki MUST be made with strained, whole mild yogurt from Greece, otherwise the result will be runny as many users have noted. Also lemon juice is preferable to vinegar. But the one non-negotiable item is the strained, full fat yogurt. Tzatziki is served with everything from pita as a dip, to grilled fish or meat as a condiment, to gyros as a sauce.

Steps to make Kinda Tzatziki:
  1. Shred up some cucumber and keep some of the skin. Sprinkle a large pinch of salt and rest for 5 mins.
  2. Add your garlic to the bowl.
  3. Squeeeeeeeeeze out the juice from the cucumber and chop to desired consistency (I like mine chunky).
  4. Add the cucumber and garlic to a bigger bowl. Scoop in about 1.5 cups of yogurt, 1/2 tsp salt, lemon, freshly cracked pepper, and your cilantro. Mint would be amazing with this too!
  5. Adjust seasonings to taste. I personally would place this in the fridge for about an hour to let the REAL flavors come out - otherwise, you can eat this straight from the bowl. Enjoy!
