  1. Get 4 Whole Eggs
  2. Take 1 cup deli sliced, diced roast beef
  3. Prepare 1/2 cup Green Bell Peppers
  4. Take 1/4 cup graded cheddar or pepper jack cheese
  5. Take dash Salt
  6. Prepare dash ground black pepper
  7. Take 1 vegetable oil spray ( important!!)

Layer Swiss cheese on one side of omelet then layer the roast beef mushroom mixture on top of the swiss cheese. Steps to make Roast Beef Omelette:
  1. Crack eggs, beat all four whole eggs together
  2. Over medium/low heat, add eggs to vegetable sprayed skillet
  3. Turn the heat down a bit, allow the eggs to solidify without burning.
  4. There will be runny yoke along the surface. Gently swirl it around the edges allowing it to solidify. Continue this process until most of the runny yoke is solidified.
  5. Add roast beef and peppers along with a little cheese to the flat surface of the omelette
  6. (Optional) you can certainly saute the peppers and meat together before adding it to the omelette.
  7. With two sprayed spatulas, carefully work along the edges of the omelette, flipping the edges over simultaneously
  8. With the folded ingredients inside the omelette, carefully slide it onto a large plate and sprinkle cheese over the top
  9. (Optional) if you're unsure of the middle being done, a 30-second microwave would do the trick.
  10. Serve with warm salsa and sour cream if you wish!

Layer Swiss cheese on one side of omelet then layer the roast beef mushroom mixture on top of the swiss cheese. Fold the egg mixture over and cover with lid until the omelet begins to brown - then flip the omelet and cover with lid until that side is browned. Slide omelet onto plate and serve with cucumbers and cream cheese. Place a lid on until the omelet starts to set. Immediately remove the lid and fold omelet from the sides to the middle.
