The ingredients needed to make Chicken Macaroni Cream Soup (Sopas):
  1. Get 2 chicken breasts, cubed or strips
  2. Take 1 medium onion, chopped
  3. Make ready 1/4 garlic head, chopped
  4. Get 1 1/2 c cooked macaroni or elbow pasta
  5. Prepare 1 small carrot, jullienned or diced (none in photo)
  6. Prepare 1/4 cabbage, in strips
  7. Make ready 1/4 box (+/- 60ml) all purpose cream
  8. Take 1/2 of chicken bullion cube
  9. Prepare 1/2-1 Tbsp Butter
  10. Make ready 1-2 Tbsp Cooking oil
  11. Make ready 1.5 L Water
  12. Take to taste Salt
  13. Prepare to taste Pepper
  14. Prepare Green onions to garnish (optional)

I used All Purpose Cream instead of evaporated milk like in the traditional recipe. Combine water and onion in a pot and bring to a boil. Add chicken, garlic powder, and onion powder. Bring back to a boil and reduce heat to medium-low.

Instructions to make Chicken Macaroni Cream Soup (Sopas):
  1. Prepare ahead: half cook elbow pasta according to package instructions. Set aside. Also half cook (seasoned with S&P) chicken in a separate pot in 1/2 cup water then cut into cubesor strips. Set aside.
  2. Saute onions then garlic in oil in a pot.
  3. Once fragrant, add in your chicken and 1/2 c water. Boil until cooked and remove then cut into cubes or strips. Meanwhile add 1L water into the same pot and drop in the chicken bullion or broth cube.
  4. Return the cut chicken into the pot and add your elbow pasta, carrots, cabbage and All Purpose Cream (Nestlé or other brand). Get a spoon and get a knob of butter, add into the pot (optional). Stir until simmmering.
  5. Taste and season with salt & pepper. Adjust if you need to add more both cube. When satisfied, taste elbow pasta if okay to your liking. I like mine al denté. Remember it will continue cooking when you turn off the heat. Serve and garnish with snipped green onions.
