The ingredients needed to make Chicken Pad Thai:
  1. Prepare Half package of Thai rice noodles, prepared as box instructs
  2. Prepare 1 pound diced chicken
  3. Get 2 Tbs EVOO
  4. Get 1 bunch green onion, chopped
  5. Take 2 cloves garlic, minced
  6. Make ready 1 cup matchstick carrots
  7. Take 1 cup broccoli slaw mix
  8. Prepare 2 Tbs sesame oil
  9. Prepare 2 Tbs brown sugar
  10. Prepare 2 Tbs lime juice
  11. Prepare 3 Tbs soy sauce
  12. Make ready 1 squirt sriracha
  13. Make ready 1/2 cup dry roasted peanuts
  14. Prepare 1/2 cup chopped cilantro

Steps to make Chicken Pad Thai:
  1. Cook noodles according to package directions, set aside
  2. Heat EVOO in large skillet, add diced chicken
  3. Cook chicken until almost done
  4. Add green onion and garlic, cook until soft
  5. Add carrot and broccoli slaw mix
  6. Mix oil, sugar, juice, sauce, and sriracha in small bowl
  7. Add sauce to pan once chicken is thoroughly cooked
  8. Add noodles
  9. Simmer a few minutes and mix thoroughly
  10. Remove from heat and garnish with cilantro and peanuts
  11. I like to add the broccoli slaw mix to get more veggies, making this an easy one-pot meal
