The ingredients needed to make Chicken and Bean Quesadilla:
  1. Get Cooking spray
  2. Prepare 1 can black beans
  3. Take 2 lbs chicken breast diced
  4. Take 1 cup diced red onion
  5. Get 2 tsp cumin
  6. Prepare 8 oz mushrooms
  7. Make ready 16 small corn tortillas
  8. Prepare 2 cups shredded cheddar
  9. Take Packet fiesta ranch dry mix
  10. Make ready 2 cups greek yogurt

In a small bowl, combine the cheeses. In a frying pan over low heat, lay tortilla flat. On one side of tortilla, layer cheese, spread bean mixture, and add chicken. Fold in half and turn once until cheese is completely melted.

Instructions to make Chicken and Bean Quesadilla:
  1. Spray a pan with cooking spray and sauté beans(drained and rinsed), onion, mushroom, cumin, and chicken for 5-6 min or until chicken is cooked through.
  2. Remove from pan and set aside.
  3. Spray pan again, place 1 tortilla in pan, put 2 tbsp of cheese on tortilla, then 1/2 cup of chicken mixture. Place another tortilla on top, cook for 2 min on both sides.
  4. Repeat for 7 more quesadillas.
  5. Cut into quarters.
  6. Mix the ranch packet and yogurt and spoon over quesadillas. Serve hot. (Taco sauce, salsa, or chipolte sauce are all good substitutes for the spicy ranch)
  7. This recipe is great with my Mexican Shredded Chicken recipe in it.
