The ingredients needed to make Geera Chicken:
  1. Get 1 pound diced chicken breast (seasoned)
  2. Take half medium onion (diced)
  3. Get 3 garlic cloves (lightly crushed and roughly chopped)
  4. Make ready 8-12 chadon beni leaves (culantro/recao) minced
  5. Take 2 tbsps oil
  6. Make ready 1/8 tsp methi (fenugreek)
  7. Take 2 tbsps roasted geera (cumin) divided
  8. Prepare 1 pepper (minced)
  9. Get to taste salt

Instructions to make Geera Chicken:
  1. When seasoning chicken, add one tbsp geera. Let marinate.
  2. Heat oil on medium heat. Add methi and let cook until brown.
  3. Add onion and garlic and cook until soft.
  4. Turn heat to low then add geera. Stir and let roast for 3 to 4 minutes.
  5. Turn heat up to medium and add seasoned chicken. Stir chicken to coat with geera in pot. Cover pot and let cook for about 5 minutes.
  6. Add chopped chadon beni and hot pepper and, if necessary, add water. Stir and cover for another 5 minutes
  7. Uncover and taste. Add salt if necessary. Turn heat up on high and let water evaporate.
