The ingredients needed to make Tiropita/ Cheese pie:
  1. Prepare 1 pound feta
  2. Make ready 1 pound ricotta
  3. Get 8 oz cream cheese
  4. Get 3 eggs
  5. Prepare 1/2 pound butter
  6. Prepare 1/2 cup dill or parsley or mixture
  7. Make ready 20 sheets phyllo pastry

I make mine with a combination of three cheeses: ricotta, feta and parmesan. When you make these, make sure to double or triple the recipe. Tiropita recipe, also known as Greek cheese pie. For Greeks, a slice of tiropita is the equivalent of a bagel in New York or a baguette in Paris.

Instructions to make Tiropita/ Cheese pie:
  1. Crumble feta. Combine cheeses with butter. Beat eggs until thick. Combine egg with cheese and then mix in dill. I like dill a lot, so I add more than recipe calls for
  2. Line 11x14x2 inch pan with 10 buttered sheets of phyllo. Add egg-cheese mixture. Top with 8 buttered sheets of phyllo.
  3. Bake in 350 F oven for ~30 minutes or until golden brown. Cut into squares
