The ingredients needed to make Macaroni and Tomatoes:
  1. Take Macaroni—————-
  2. Prepare 1 pound macaroni pasta
  3. Prepare 3 quarts water to boil pasta
  4. Get 1-1/2 teaspoon kosher salt cooked pasta
  5. Take 2 teaspoon kosher salt for water
  6. Get Tomatoes—————-
  7. Prepare 1/4 pound smoked sliced bacon
  8. Get 1 medium diced onion
  9. Take 4 large tomatoes 2 pounds
  10. Prepare 1 teaspoon ground black pepper
  11. Get 2 teaspoon kosher salt

How to Prepare: Once the water is boiling, stir in the macaroni, and return to a boil. Drain well in a colander set in the sink. Pour into the prepared baking dish and add the butter, Cheddar cheese, and diced tomatoes; stir. In a large pot, cook the elbow macaroni according to package instructions, but stop short of al dente.

Instructions to make Macaroni and Tomatoes:
  1. Wash the tomatoes. Boil the water add tomatoes.
  2. After the tomatoes have been in the boiling water remove after 20 seconds. Carefully break the skin. Peel.
  3. Remove the core. I used a Mellon baller. Remember you may forget that the tomatoes are still raw in the middle. Crush and set aside. Retain the juices.
  4. Boil the pasta in the same water you used to scald the tomatoes. Add salt to the water. Save a cup of the pasta water.
  5. Drain the pasta and add 1-1/2 teaspoon kosher salt.
  6. Render the bacon with the onions.
  7. When the onion is tender add the tomatoes.
  8. Add the salt for the tomatoes. Stew the tomatoes for 15 minutes. Thicken with a bit of the pasta water.
  9. Add the pasta stir well.
  10. Let sit 10 minutes covered. Serve I hope you enjoy!!

Drain the macaroni and return it to the pot. Add the tomato sauce, stewed tomatoes, and sugar to the drained macaroni, stirring it all together so the macaroni is well coated with sauce. Cook just until the pasta is done and has absorbed some of the juices.
