The ingredients needed to make Coconut Jerk Chicken Pasta:
  1. Prepare 1 llb Chicken Breast
  2. Get 2 Teaspoon jerk seasoning
  3. Make ready 3-4 Cloves Garlic
  4. Take 1/2 Small to Medium Green or Yellow Pepper (Sweet Pepper)
  5. Make ready 1 Small tomato
  6. Get 1 Packet Penne Pasta (200g)
  7. Get 1 Tablespoon butter
  8. Prepare 1/2 teaspoon Salt
  9. Take 1/4 cup shredded cheese (optional)
  10. Get 3/4 cup coconut milk

Add parmesan cheese to the pot, and stir until it melts in the sauce. Then finally add the chicken pieces and pasta and give everything a good mix so the ingredients are well coated in the sauce. Let that cook together for another minute before you pour in the coconut milk and chicken stock. Return the chicken to the pan and bring it to a low boil.

Instructions to make Coconut Jerk Chicken Pasta:
  1. Chop Chicken into bite size pieces then Season chicken breast with 1 teaspoon jerk seasoning. For best results let it marinate for 20-30mins. Bake, grill or get chicken breastsfor about 20 minutes..until cooked.
  2. Cook Penne Pasta according to instructions on package; drain and set aside.
  3. Heat butter and saute garlic, tomato and Green pepper for about 3-5 mins.
  4. Add coconut milk, salt and add the additional jerk seasoning (optional). Cook for about 3-5 mins on medium heat..keep stirring throughout this process.
  5. Fold in the pasta and stir well to combine, then add chicken breasts.
  6. Sprinkle on the shredded cheese (optional). Serve immediately.

Let that cook together for another minute before you pour in the coconut milk and chicken stock. Return the chicken to the pan and bring it to a low boil. In the meantime, get a big pot of water on to boil for the pasta and salt it generously. Heat olive oil in a skillet over medium heat. Stir in the pineapple and its juice, coconut, brown sugar, jerk seasoning, cinnamon, chili powder, red pepper flakes, salt and pepper.
