  2. Prepare 4 zucchini run through a spiralizer
  3. Prepare 1 jar pasta sauce(remove 1 cup, reserve for another use)
  4. Take 1 cup whole milk
  5. Get 3 tbsp tomato paste
  6. Make ready 3/4 cup shredded parmesan
  7. Get 1 tsp chopped garlic
  8. Take 1/2 tbsp Italian seasoning

Serve over zoodles for a delicious low carb meal! I've always loved my carbs a little too much. Prep: First, mix the meatball ingredients until well combined, then roll into balls. Assemble: Finally, divide the zoodles and meatballs into containers and top with the sauce.

  1. In a large pot of lightly salted water, add zoodles and cook until tender. Roughly 10 minutes.
  2. While zoodles are cooking add sauce, milk, garlic, Italian seasoning, and only 1/2 Parmesan cheese to a pot. Mix well and add meatballs. Heat on medium until meatballs are heated through.
  3. Drain zoodles very well and add to a serving bowl. Ladle sauce on and place meatballs on top. Sprinkle with reserved parmesan cheese.
