The ingredients needed to make Mango rice:
  1. Prepare First of all boil rice:
  2. Take 1 bowl basmati rice
  3. Get 2 tsp oil
  4. Take For tadka
  5. Get 1 large raw mango (grated)
  6. Prepare 4-5 tsp cooking oil
  7. Prepare 1/2 tsp mustard seeds
  8. Take few curry leaves
  9. Prepare Handful raw peanuts with skin
  10. Take 10 cashew nuts
  11. Make ready 3-4 tsp chana dal
  12. Prepare 3 small sliced green chilli
  13. Prepare 1 tsp turmeric
  14. Make ready to taste red chilli powder and salt according
  15. Get 2 handful grated coconut

This dessert is also popular in other South East Asia countries, including my hometown, Malaysia. Mango rice has a very unique flavor due to the tartness of the mangoes, the sweetness of the coconut, and the heat of the chilies all being mixed together. This is a simple but flavorful and satisfying light lunch! Raw mango rice is also known as Mangai Sadam or Mamidikaya Pulihora.

Instructions to make Mango rice:
  1. Boil the rice as we normally do but do add 2tsp cooking oil in it.
  2. On a medium heat, in a pan add oil, add mustard seeds, raw peanuts, and chana dal, fry for minute or Peanuts change colour.
  3. Also add cashew nuts, green chilli and curry leaves. Mix well.
  4. Add grated coconut, grated mango, salt, turmeric, red chilli powder and mix well
  5. Cook on low heat covered, till mangos are soft
  6. Last, add boiled rice and gently mix it. And mango rice is ready!!
  7. You can add add lemon juice if you think rice is not enough tangy.

This is a simple but flavorful and satisfying light lunch! Raw mango rice is also known as Mangai Sadam or Mamidikaya Pulihora. There is another version of mango rice from Karnataka cuisine known as mavinakayi chitranna. In this, mangoes are pureed unlike grated mangoes in this recipe.
