The ingredients needed to make Chili Mango Chicken Stir-fry:
  1. Get 1 lb boneless skinless chicken, thinly sliced
  2. Get 2 Tbsp dry sherry, divided
  3. Make ready 2 tsp soy sauce, low sodium
  4. Take 2 tsp cornstarch, divided
  5. Make ready 1 tsp salt, divided
  6. Get 1/3 cup chicken broth, low sodium
  7. Get 1 Tbsp sriracha
  8. Get 1 Tbsp peanut oil (substitute sesame oil if needed)
  9. Prepare 3 quarter size pieces of ginger root (peeled and smashed)
  10. Make ready 2 cups green bell peppers, chopped
  11. Take 1 cup red bell peppers, chopped
  12. Get 1 large mango, 1/2 inch slices

Serve with quinoa, brown rice or cauliflower rice for a full meal. Heat a wok over high heat, and when hot, add the oil. Add the vegetables and chillies to the wok, and fry briskly for a minute. When sauce has thickened slightly and chicken is cooked through, add the mango, cashews, and green onions and stir to combine.

Instructions to make Chili Mango Chicken Stir-fry:
  1. Mix: 1 Tbsp sherry, 2 tsp soy sauce, 1 1/2 tsp cornstarch, 1/2 tsp salt. Coat chicken and set aside
  2. Mix: chicken broth, sriracha, 1 Tbsp sherry, 1/2 tsp cornstarch. Set aside
  3. Heat skillet or wok over high heat. Add oil, then ginger - stir-fry until fragrant
  4. Add chicken, cook until no pink remains but chicken should not be done
  5. Add bell peppers and 1/2 tsp salt, let cook 1-2 minutes
  6. Stir broth and add to wok stir-fry 1-2 minutes or until chicken is cooked through
  7. Remove from heat mix with mango

Add the vegetables and chillies to the wok, and fry briskly for a minute. When sauce has thickened slightly and chicken is cooked through, add the mango, cashews, and green onions and stir to combine. Let the chicken marinate for about ten minutes. Next, saute chopped onion and ginger. Stir in snow peas and chicken then stir-fry for three to four minutes.
