  3. Prepare 1 cup shredded cheese
  4. Prepare 1/2 cup frozen/fresh spinach

Instructions to make Omelette Heaven:
  1. Fry bacon in small frying pan until barely brown (save bacon grease)
  2. Whisk eggs with salt and pepper to taste
  3. Heat 2 tbsp butter and bacon grease in frying pan
  4. Add whisked eggs to frying pan on lowest setting
  5. Chop tomatoes finely
  6. For frozen spinach: drain excess water, sautee spinach in small frying pan on low setting with 1 tbsp butter, salt and pepper to taste
  7. For fresh spinach: chop spinach finely, sautee in small frying pan on low setting with 1 tbsp butter, salt and pepper to taste
  8. Chop onion finely, place into small frying pan to sautee on medium setting, add bacon once onions begin to soften, fry bacon/onion mixture until barely crispy
  9. Add bacon/onion mixture to top of egg in frying pan
  10. Add shredded cheese to top of bacon/onion mixture
  11. Add spinach to top of shredded cheese
  12. Add tomatoes to top of spinach
  13. Broil for 5 minutes in frying pan
  14. Serve with toast: optional
