The ingredients needed to make Rava Kesari:
  1. Take 1 cup rava(sooji/semolina)
  2. Prepare 4 tbsp ghee
  3. Make ready 1 cup milk
  4. Make ready 1 cup water
  5. Take 1/2 cup sugar
  6. Take 4-5 cashews halved
  7. Take 4-5 almonds slivered
  8. Prepare 1 tbsp raisins
  9. Take 2 tbsp saffron milk
  10. Make ready 1/4 tsp cardamom powder

Instructions to make Rava Kesari:
  1. To begin with heat 2 tbsp ghee in a pan and roast the dry fruits on a low flame for 1-2 minutes. Remove them to a plate.
  2. Now in the same ghee roast rava on low flame for 5 minutes or till it turns aromatic. Keep aside.
  3. In another pan take 1 cup milk. Add 1 cup of water and bring it to a boil. When the milk comes to a rolling boil, turn the flame to low and slowly add rava. Stir consistently till the rava absorbs milk and no lumps are formed.
  4. Further add sugar and stir well till it dissolves.
  5. Next add remaining 2 tbsp ghee and mix well.
  6. Now add saffron milk, roasted dry fruits and mix well.
  7. Additionally add cardamom powder. Mix well and continue to cook until the mixture leaves the pan. Turn off the flame.
  8. Finally serve Rava Kesari hot or warm garnished with few dry fruits and saffron strands.
