The ingredients needed to make Vegetarian tacos:
  1. Prepare 1/2 of a Jicama
  2. Get 1/2 of a Mango
  3. Prepare 1 lemon
  4. Get 1 lime
  5. Get 1 small cucumber
  6. Prepare 2 medium sized tomatoes
  7. Take 1 salt, pepper, cilantro and other seasonings
  8. Get 1 Optional: cabbage or taco shells for wrapping ingredients in
  9. Take 1 we used tofo scramble for protein filler

Veggie Tacos These vegetarian tacos are stuffed with a blend of sauteed cabbage, peppers and black beans so filling, you won't miss the meat. These vegetarian tacos are a bit outside the box, since the filling is made of quinoa! The quinoa filling is toasted and filled with taco spices and lime. Then combine it with a bell pepper slaw, spicy sour cream, salsa, and feta cheese, and you've got a new level of delicious.

Instructions to make Vegetarian tacos:
  1. Chop up the onion and a tomatillo and add to a hot frying pan for about 2 or 3 minutes or until browned- then set aside in a medium sized bowl.
  2. Add salt and pepper to the onions and tomatillos while they are in the frying pan.
  3. Now cube both the jicama and the mango.
  4. Now add the mango and jicama to the onions and tomatillos
  5. Now slice the cucumber and tomatoes and add to the mix… all ingredients should be in the bowl besides whatever protein you will be using (tofu, seitan, etc.)
  6. Finish up by putting it all out on a platter and let guest pick out what they want to add to it whether it's tofu, cabbage,or whatever they want to wrap all the great ingredients in.
