  2. Take 1 can (about 14 ounces) diced tomatoes with green pepper,celery and onion
  3. Prepare 8 ounces firm tofu,crumbled
  4. Get 1 cup mild prepared salsa
  5. Prepare 1 cup vegetable broth
  6. Prepare 1/2 cup frozen corn
  7. Make ready 1 tablespoon chili powder
  8. Take 1 teaspoon ground cumin
  9. Take 1/2 teaspoon ground chipotle pepper
  10. Take 1/2 teaspoon dried Oregano
  11. Get 2 cups cooked rice
  12. Prepare 8 (6 inch) flour tortillas
  13. Prepare Optional toppings;sliced avocado,sour cream,lettuce and/or chopped fresh cilantro
