  1. Prepare 2 bell peppers, cut into strips
  2. Prepare 2 carrots, cut into cubes
  3. Take 2 potatoes, cut into cubes
  4. Prepare curry powder
  5. Take coconut milk
  6. Get 6 pcs tofu

Pour in coconut milk, scraping up any curry paste with a wooden spoon. Add fish sauce, lime zest and juice. Add tofu cubes and snow peas. Simmer until the sauce thickens slightly and the snow peas.

  1. Deep fry tofu for 5 mins on each side, set aside
  2. Stir fry bell peppers, carrots and potatoes until soft
  3. Add coconut milk, simmer for 2 mins
  4. Add curry powder, simmer for 2 mins
  5. Place fried tofu on serving dish, pour vegetables and curry mix on top of tofu, serve

Add tofu cubes and snow peas. Simmer until the sauce thickens slightly and the snow peas. Tofu, Cauliflower, sweet potatoes, bell pepper, garlic, turmeric, ginger and simmer in this coconut curry dish made in partnership with Nasoya Tofu.
