The ingredients needed to make Rolled Tofu with Broth:
  1. Take 200 g silken tofu (drain water)
  2. Take 3 cm burdock root (cut into thin shreds)
  3. Prepare 3 cm carrot (cut into thin shreds)
  4. Make ready Seasonings for burdock and carrot:
  5. Get * 2 tsp mirin, sake
  6. Make ready * 1 tsp soy sauce, sugar
  7. Get 4 ~5 small shrimps (cut into 1cm chunks, sprinkle salt and potato starch, stir and leave for 5 mins, wash well and squeeze the lemon)
  8. Take 1 tsp salt for the shrimps
  9. Prepare 1 tbsp lemon juice for the shrimps
  10. Take 1 tbsp potato starch for the shrimps
  11. Prepare 5 ~10 edamame (green soy beans) (removed from the pod)
  12. Take (A) broth:
  13. Take * 500 ml water
  14. Prepare * 4 g dried bonito flakes (put in a tea bag)
  15. Get * 2 1/2 tbsp soy sauce
  16. Make ready * 2 1/2 tbsp sugar
  17. Get *1 tbsp sake
  18. Prepare 1 tbsp potato starch (dissolved in 1 tbsp water)

Add the soft tofu in big chunks. This recipe is very Japanese dish, like one of the Japanese kaiseki. Heat a frying pan on a medium heat with enough neutral-flavoured oil added to cover the bottom. When the oil is hot, carefully place the tofu in the pan, rotating as each side becomes golden.

Steps to make Rolled Tofu with Broth:
  1. Put burdock and carrot and the seasonings for burdock and carrot in a pan, and saute over low heat until the liquid is almost gone for about 2~3 mins. Let them cool.
  2. Cut tofu in half crosswise, put burdock, carrot and shrimps on the one tofu. Put another tofu on top. Pierce edamame inside tofu from a cross section.
  3. Wrap the tofu in plastic wrap tightly, tie up the both ends. Prick holes in a whole of it with a skewer. Simmer (A) ingredients and wrapped tofu in broth for about 20~25 mins over low heat. Let it cool to room temperature.
  4. Pour 200 ml of ③ step's broth into another pan. Add dessolved mixture of potato starch and water, and stir well to thicken the broth with them.
  5. Just before eating, pour the ④ step's broth on the cutted in round slices tofu.

Heat a frying pan on a medium heat with enough neutral-flavoured oil added to cover the bottom. When the oil is hot, carefully place the tofu in the pan, rotating as each side becomes golden. In a Dutch oven or soup pot, heat the oil over medium-high heat. Add the garlic slices to the pot and sauté until fragrant. Add the sliced carrots and sauté until both start to soften.
