The ingredients needed to make Karjikai/Karanji:
  1. Get 1 cup Maida/All purpose flour
  2. Take 1/2 cup fine sooji
  3. Get 1 teaspoon sugar
  4. Get Pinch salt
  5. Prepare 2 teaspoon ghee
  6. Take Oil for deep frying
  7. Get For filling
  8. Get 1 cup Roasted channa dal
  9. Prepare 3/4 cup jaggery/sugar
  10. Prepare 1-2 cardamom seeds
  11. Take 1/2 cup dry coconut powder
  12. Take Chopped almonds and cashews (optional)

For stuffing we need grated dry coconuts, powdered jaggery, cardamom powder, roasted channa (powder). Continuing with my Ganesh chathurti special series, today I will show you one of my favourite sweet dishes - Karjikai. This is a deep fried pastry with a yummy sweet filling of copra/sugar mixture. We compulsorily prepare this dish for Ganesha festival at home, and at other times for those random sweet cravings!

Steps to make Karjikai/Karanji:
  1. Mix Maida, sooji, sugar n pinch of salt in a mixing bowl add some ghee and mix everything together with water to make a soft dough knead it for 3 minutes(just like chapati dough but bit softer than that) cover it with wet cloth and place it aside for 1 hour
  2. Take all the filling ingredients (except nuts) in a blender and grind it to fine/coarse powder
  3. Take a karjikai mould (available in market)
  4. Take the dough knead it for 2 minutes then take a small portions of it and roll it like a poori shape then place it on the mould apply very little amount of water to the edges with the help of finger tip and then add the filling powder in the middle then close the mould properly gently press all the edges
  5. Keep the oil in deep frying pan once the oil is hot enough then place the prepared karanji on oil let oil be on medium flame fry to golden brown
  6. Store karanji in a airtight box
