The ingredients needed to make Murgh Badami:
  1. Get 8 drumsticks
  2. Prepare 1/4 tsp saffron soaked in 1/4 cup hot milk
  3. Prepare 1 tbsp kewra water
  4. Make ready as needed oil for frying
  5. Prepare for smoking
  6. Make ready 2 pieces coal
  7. Get 1/4 tsp carom seeds
  8. Make ready 4 tbsp clarified butter
  9. Get garnish
  10. Prepare as needed almond slivers
  11. Take as needed coriander leaves
  12. Get spice mix (dry roast & grind to fine powder)
  13. Get 1 tsp whole black pepper
  14. Take 2 black cardamom
  15. Make ready 3 cloves
  16. Take 1 "piece cinnamon
  17. Prepare 3 green cardamom
  18. Make ready 1/2 tsp carom seeds
  19. Get 1/4 tsp nutmeg powder (to be added while grinding)
  20. Make ready grind to a paste
  21. Make ready 1 " piece ginger
  22. Make ready 1.5 tsp garlic paste
  23. Get 3 tbsp yogurt
  24. Make ready 1 medium onion(sliced & deep fried to golden brown)
  25. Prepare 2 medium tomato
  26. Prepare 3 tbsp almond slivers
  27. Make ready 3 green chillies
  28. Get to taste salt

Murg Badami is an almond based gravy dish which is made with almond and poppy seeds paste, flavored with cardamom powder and whole spice powder. This is an easy but creamy and spicy gravy based chicken recipe. Usually cook with sliced onions but I used boiled onion puree that gives a nice creamy taste.

Instructions to make Murgh Badami:
  1. Marinate the chicken pieces in the ground paste and spice mix
  2. Make a cup with aluminium foil and place it in the centre of the marinated chicken
  3. Burn the coal pieces. In a small pan heat 1 tbsp clarified butter until smoking.
  4. Place the lit coal pieces in in the foil cup,place the carom seeds on top and immediately pour the.hot clarified butter on it.Cover tightly with a lid or aluminium foil.Keep aside for 30 minutes.
  5. Discard the coal and pour some of the clarified butter into the marinade.
  6. Heat a pan on low flame.Add clarified butter into the pan.
  7. Pour in the chicken along with the marinade and let cook on a low flame until the chicken is tender and soft. Add saffron milk cook for 5 minutes.
  8. Add kewra water and stir through.Cook until desired consistency is reached.
  9. Serve hot garnished with almond slivers and coriander.
  10. Best eaten with Indian flatbread.
