The ingredients needed to make Greek Inspired Stuffed Green Peppers:
  1. Take 2 large or 4 small green peppers, similar in size
  2. Prepare 16 oz ground beef / lamb
  3. Prepare 1 small yellow onion finely chopped
  4. Get 2 garlic cloves minced
  5. Make ready 2 large ripe Roma tomatoes, diced
  6. Make ready 2 tablespoons Homemade Greek Seasoning Mix (see separate recipe)

I used both green and red bell peppers to try because usually I only like red bell peppers but this recipe really works best with green bell peppers. But other than that I didn't change a thing. I served it with a greek cucumber/parsley yogurt sauce which I happened to have in the fridge and it went very well with this dish. While peppers bake, combine panko, olive oil, and dill in a small bowl.

Instructions to make Greek Inspired Stuffed Green Peppers:
  1. Wash green peppers, slice off top and remove inner core and seeds. Keep the tops and finely dice.
  2. Par boil the green peppers in salted water for 5 minutes. Drain on paper towel and set aside.
  3. Brown the ground beef or lamb in a large pan until no pink remains. Drain excess fat. Add the greek seasoning mix and combine well. Add the chopped onion, diced tops from the green peppers and garlic, cook until soft. Add the chopped tomatoes and stir until heated through.
  4. Preheat the oven to 350 degrees. Fill each drained green pepper with the meat mixture and place in an ovenproof dish. Cover the dish with aluminum foil and bake for 30 mins.
  5. Enjoy!

I served it with a greek cucumber/parsley yogurt sauce which I happened to have in the fridge and it went very well with this dish. While peppers bake, combine panko, olive oil, and dill in a small bowl. Remove foil, and top peppers evenly with panko mixture. Really great dish, and very pretty! I used green, red, and yellow bell peppers to see which flavor I liked best; the sweetness of the yellow bell pepper makes it my favorite, but I will do all three each time I make it.
