The ingredients needed to make AMIEs ORECCHIETTE con i BROCCOLI

(PASTA with BROCCOLI):

  1. Prepare 450 grams broccoli
  2. Prepare 350 grams orecchiette or other medium-sized pasta
  3. Take 2 garlic cloves, peeled
  4. Make ready 1 dried chilli, seeded
  5. Prepare 6 tbsp extra virgin olive oil
  6. Make ready 4 tbsp freshly grated parmesan
  7. Get 1 salt and freshly ground black pepper
  8. Get 3 salted anchovies, boned and rinsed or 3 canned anchovy fillets, drained

Finally, add the pasta to the simmering broccoli and and toss to heat through. Remove from heat, toss with the grated cheese and serve immediately. Use the slotted spoon to transfer the orecchiette into the frying pan and combine over a low heat for half a minute. Sprinkle some dried chilli flakes and drizzle some olive oil on top.

Steps to make AMIEs ORECCHIETTE con i BROCCOLI

(PASTA with BROCCOLI):

  1. Trim the brocolli. Divide into small florets and cut the stalks.
  2. Bring a large saucepan of water to a boil. Add about 1 1/2 tbsp of cooking salt and then slide in the brocolli. Stir well and cook for 5 minutes after the water has come back to a boil. Retrieve the brocolli from the water with a slotted spoon and lay them on kitchen paper. Pat dry and set aside.
  3. Bring the brocolli water back to the boil and add the pasta. Cook in the usual way until al dente.
  4. While cooking the pasta, chop the garlic, chili and anchovy fillets together and saute them in half the oil for 2 minutes, using a large frying pan. Mix in the brocolli and saute for a few minutes, turning constantly.
  5. When the pasta is done, drain and turn it into the frying pan. Stir-fry for 1 minute, then taste and check the seasoning.
  6. Before you serve the pasta, pour over the rest of the olive oil and mix in the freshly grated parmesan.

Use the slotted spoon to transfer the orecchiette into the frying pan and combine over a low heat for half a minute. Sprinkle some dried chilli flakes and drizzle some olive oil on top. Add the parboiled broccoli florets and cook for two to three minutes stirring well. Stir in the chicken stock and bring to a boil. Now reduce heat to a simmer and cook the sauce for eight to ten minutes.
