The ingredients needed to make Lemon Meringue Tart:
  1. Prepare 1 Pkt Tennis Biscuits
  2. Get 100 g margerine melted
  3. Take 1 Tin condensed milk
  4. Make ready 2 Eggs separated
  5. Prepare 125 ml Lemon Juice
  6. Get 25 ml Castor sugar

Today I am using a blind baked tart shell. Blind baking is baking a pie crust or pastry without filling. I will add in lemon filling in it. This lemon meringue tart's creamy lemon filling is extra citrusy and has the perfect consistency to balance out the meringue's crunchiness.

Instructions to make Lemon Meringue Tart:
  1. Crush biscuits and add melted but to form a biscuit base. Press base into either a round pie plate. I prefer to use a square glass bowl.
  2. Using an electric beater mix together the condensed milk lemon juice and egg yolks
  3. Beat the egg whites till stiff then gradually add the castor sugar and beat until it peaks
  4. Add on top of the filling and bake for 12-25 mins on 180 deg Celsius to top is golden brown
  5. NB: your can add cut up marshmallows into the egg whites to make a marshmallow tart.
  6. For fun you can add marshmallows to the filling and the topping.
