The ingredients needed to make FoFa Braised Pig Trotters:
  1. Prepare Pressure Cooker
  2. Make ready 2 split pig feet
  3. Get 4-6 cloves garlic
  4. Get 1 (3 inch) piece fresh ginger
  5. Prepare 1 tsp salt
  6. Prepare 1 Tbl. Black pepper corns
  7. Prepare 2 tsp. Crushed red pepper flakes
  8. Prepare 2 Tbl. Vinegar
  9. Make ready Braise
  10. Prepare 2 1/2 cups pressure cooker broth
  11. Take 3 cloves garlic
  12. Get 2 Tbl. Fish or soy sauce
  13. Take 2 tsp. Rubbed sage
  14. Make ready 1 tsp. Ground thyme
  15. Make ready 1 tsp. Crushed red pepper flakes
  16. Get 1/2 tsp. Ground cumin
  17. Get 1 salt to taste

Steps to make FoFa Braised Pig Trotters:
  1. Place trotters in pressure cooker, cover or almost cover with water
  2. Crush garlic, add to pressure cooker
  3. Slice ginger, no need to peel, add to pressure cooker
  4. Add the rest of the pressure cooker ingedients.
  5. Cover and bring pressure cooker up to pressure (15 psi on mine), lower heat just to maintain pressure, cook 15 minutes
  6. Turn heat off, let pressure release naturally, 10-15 minutes. Release any remaining pressure, open cooker.
  7. Get a pan for the Braise, I'm using a stirfry pan, transfer trotters to pan.
  8. Add broth, turn heat on to medium high.
  9. Add the rest of the Braise ingredients
  10. Bring to a boil, turn down to a simmer, cover
  11. Taste the broth and adjust seasoning, mine had enough salt and i didn't add any
  12. Every 10 minutes flip the trotters over. You will braise for 30 minutes. These are after 20 minutes, 2nd turn.
  13. After 30 minutes turn off heat. They are done.
  14. Serve.
