  2. Get 2 tbsp olive oil
  3. Take 500 g pork mince
  4. Get 3 garlic cloves, finely chopped
  5. Get 2 tbsp flour
  6. Get 1 cup beef stock
  7. Make ready 3 medium potatoes
  8. Get 12 cherry tomatoes
  9. Prepare 1 tbsp freshly cut parsley
  10. Take 2 medium carrots, chopped
  11. Get 1 medium potato, diced
  12. Make ready 1 tbsp, butter

Steps to make Pork Mince and Mash Potato Casserole:
  1. Bring to the boil a pot of salted water. Peel and cut the potatoes in half. Add them to the water and cook for about 20 minutes or until fully cooked through. Drain well using a colander.
  2. Transfer to a bowl and mash the potatoes. Add the butter and milk and mash it all together and well combined. Set aside.
  3. Preheat oven to 200c
  4. Heat a frying pan over medium-high heat. Add the olive oil and heat. Next add the onion and fry for about 2 minutes or until soft.
  5. Stir in the mince, carrots and garlic into the frying pan and fry for about 8-10 minutes or until the mince is golden brown. Season with salt and pepper.
  6. Next add the flour, parsley and beef stock. Continue to cool for a further 6-8 minutes.
  7. Transfer the meat into a ceramic oven proof dish. Add the chopped potatoes and top with the mash potatoes.
  8. Sprinkle the cheese over the mash potatoes.
  9. Bake the casserole for 30-40 minutes. Allow to rest for 10 minutes before serving.
