The ingredients needed to make Minced lamb pie:
  1. Take 2 rashers unsmoked bacon
  2. Prepare 250 g lamb mince
  3. Take 1 onion
  4. Get 2 medium carrots
  5. Get 1 tbs tomato puree
  6. Prepare 200 g tinned chopped tomatoes
  7. Make ready 300 ml stock (veg/chicken/lamb stock cube)
  8. Prepare 1 tbs dried thyme
  9. Make ready 1 tbs hp sauce
  10. Take 170 g puff pastry
  11. Get 1 small egg

Steps to make Minced lamb pie:
  1. Chop bacon into strips and fry with the mince until cooked. Drain excess fat.
  2. Chop onion and carrots and add to pan, mix with meat and cook for 5 minutes. Season with salt.
  3. Add tomato purée & thyme and mix. Add tomatoes and stock. Mix. Bring to a boil and then reduce heat to a simmer
  4. Heat oven to 200c and prepare pie dish with a thin layer of oil and sprinkle of plain flour.
  5. Roll out pastry, cut to large circle and line the bottom of the dish and up the sides. Trim excess away. Prick the base a few times with a fork. Place in hot oven for 20 minutes.
  6. By now the filling should have reduced to a thick sauce. If not turn up the heat for a few more minutes
  7. Remove pie from oven and fill with the filling to the top of the dish
  8. Roll out the remaining pastry very thinly, then cut it into strips
  9. Beat egg and brush exposed pastry at the rim of the pie dish. Lay strips over the top and secure onto edges, ensure all strips are covered with egg. Sprinkle salt and thyme over the pie and put back in the oven for 20 minutes
  10. Prepare a side of broccoli. Take out pie. Leave pie 5 minutes before cutting and serving!
