  1. Make ready Freshly Cooked Rice 4 servings
  2. Prepare 1 tablespoon Oil
  3. Make ready 500 g Pork Mince OR Beef Mince
  4. Get 1-2 Onion *thinly sliced
  5. Get 1 small piece Ginger *finely chopped OR grated
  6. Take 1/2 cup Dashi Stock
  7. Get 2 tablespoons Sugar
  8. Take 4-5 tablespoons Soy Sauce
  9. Make ready 1 tablespoons Mirin
  10. Prepare 4 Egg
  11. Make ready Shredded Nori or Spring Onion for topping

Steps to make 'Tanin' Don:
  1. Heat Oil in a frying pan and cook Mince, Onion with Ginger. When Meat changes colour, add Dashi Stock, Sugar, Mirin and Soy Sauce and cook until the sauce is slightly thickened.
  2. Beat the Eggs and pour them over and cook until the Egg has set. DO NOT stir.
  3. Half fill a bowl with freshly cooked rice and cover it with the meat and egg mixture. Sprinkle some shredded Nori or chopped Spring Onion on top and enjoy.
