The ingredients needed to make Diced Turkey with Chorizo and Chickpeas:
  1. Get 400 g diced turkey
  2. Prepare 3 tbsp olive oil
  3. Take 1 onion, sliced
  4. Prepare 2 garlic cloves, sliced
  5. Get 1 Bell pepper, sliced
  6. Take 2 carrots peeled and diced
  7. Take 1 celery stalk, sliced
  8. Take 1-3 dried chili, depending on chilli preferences
  9. Prepare 1 tsp paprika (smoked preferred)
  10. Get Splash red wine
  11. Prepare 1 can chopped tomatoes
  12. Get 250 ml chicken stock
  13. Prepare 1 can chickpeas, drained
  14. Take 200 g chorizo, sliced
  15. Take to taste Salt and pepper
  16. Take 1 bunch fresh parsley, chopped

Serve the chicken stew topped with. Chickpeas and crumbled Chorizo sausage swimming around happily in a flavorful tomato sauce. All of this is served over rice, quinoa, or as I did - yellow bulgur. Add the chickpeas and diced tomatoes.

Instructions to make Diced Turkey with Chorizo and Chickpeas:
  1. In a saucepan, heat the oil over a medium to high heat then add the onions, Bell peppers, garlic, carrots, celery and chilli. Cook for around 5 minutes then add the diced turkey thigh and sear for another few minutes.
  2. Add the paprika, red wine and the chopped tomatoes.
  3. Next add the stock and bring to the boil.
  4. In a different pan, fry the chorizo for about 2-3 minutes then drain the oil and add to the turkey and vegetables.
  5. Reduce the heat and cook for approximately 2 hours to 2 and a half hours. Season to taste.
  6. Add the chickpeas 5 minutes before the end of cooking and heat through.
  7. To serve, sprinkle with chopped parsley.

All of this is served over rice, quinoa, or as I did - yellow bulgur. Add the chickpeas and diced tomatoes.
