  4. Prepare 1 teaspoon dried Basil
  5. Take 1 teaspoon dried Oregano
  6. Get 1 Finely chopped Onion
  7. Prepare 4 Finely chopped garlic cloves
  8. Prepare 1.5 tablespoons sugar
  9. Get Small tub of Mascarpone
  10. Take Freshly grated Parmesan for garnish
  11. Prepare Fresh torn Basil leaves (optional garnish)

Instructions to make Michelle's Tomato, Mascarpone and Chorizo Pasta:
  1. Boil 500g of Penne pasta in salted water.
  2. Whilst the pasta cooks, fry onion and garlic until translucent, in 2 tablespoons of oil, preferably Olive Oil.
  3. Add the sliced Chorizo and gently fry for 3 minutes and until the oil turns orange in colour.
  4. Stir in a 440g of good quality chopped, tinned tomatoes. Also add the dried herbs and sugar.
  5. Allow the sauce to simmer gently for 5 minutes before adding 3 dessert spoons of mascarpone and a handful of grated Parmesan. Simmer for a further 5 minutes till the sauce reduces a little.
  6. Drain your pasta well then add to the sauce mixing well till all pasta is submerged and coated in sauce.
  7. Serve with fresh crusty bread and butter. And enjoy!
