The ingredients needed to make Spanish chicken and chorizo:
  1. Make ready 1 tbsp extra virgin olive oil
  2. Take 2 sliced chicken breasts
  3. Prepare 1 onion chopped
  4. Get 1 yellow pepper sliced
  5. Make ready 1 courgette cut into small pieces
  6. Make ready 100 g chorizo sliced
  7. Get 100 ml red wine
  8. Take 400 g tin chopped tomatoes
  9. Prepare 400 g tin butter beans, drained and rinsed
  10. Get 1 tbsp tomato puree
  11. Get 1 tsp dried oregano
  12. Make ready 1/2 tsp dried chilli flakes

  14. Get chopped fresh flatleaf parsley
  15. Get sea salt and freshly ground pepper

  4. Bring the sauce to the boil, return the chicken and let simmer until the chicken is cooked through and the sauce has thicke
  5. Garnish with the parsley and serve with either green beans or rice
