Instructions to make Courgette Fritters (Kolokithokeftedes):
  1. Grate and salt the courgettes. Place in a colander for about 10 minutes to draw the water out. Squeeze well between your hands and place in a bowl
  2. Add all the other ingredients to the courgettes, mix well and form into patties
  3. Heat some sunflower oil and add the patties. Cook until golden brown (should take a few minutes on each side)
  4. Place on a plate covered with kitchen paper to drain any excess oil.
  5. Serve warm with pita bread, tzatziki (both of these recipes will be posted soon) and a tomato and basil salad
