The ingredients needed to make Pork Belly in Sherry Marinade:
  1. Make ready 4-6 slices pork belly
  2. Make ready 4-5 tbsp dry sherry wine
  3. Make ready 1 tsp pimento paste (see step)
  4. Take 1 tsp House seasoning (see step)
  5. Make ready 1 tsp garlic paste
  6. Take 2 dry bay leaves
  7. Prepare 3-4 garlic cloves, chopped
  8. Take Juice of half lime
  9. Get Juice of half lemon
  10. Take 2-4 dried chillies, crushed (depending on preference)

Instructions to make Pork Belly in Sherry Marinade:
  1. Mix all the marinade ingredients together in a bowl.

  4. Place the pork belly in a bowl and coat well with the marinade. Allow to marinade for at least 4 hours. Preferably overnight to 48 hours for better flavours. Turning the meat once so that both sides are evenly marinaded.
  5. Heat the coals or grill.
  6. Drain from the marinade and cook on each side for 5-8 minutes or until fully cooked through and slightly crispy on the outside.
