  4. Take 1 can Mexicorn, drained
  5. Prepare 1 can (10 oz.) enchilada sauce
  6. Prepare 2 tsp chili powder
  7. Prepare 1 tsp ground cumin
  8. Get 1/2 tsp black pepper
  9. Take 1/2 tsp salt
  10. Get 12 (5") corn tortillas, divided
  11. Make ready 2 cups (8 oz.) shredded cheddar cheese, divided

Steps to make Enchilada Casserole:
  1. Cook beef and onion until done. Drain fat.
  2. Preheat oven to 375°. Stir tomato sauce and next 6 ingredients into meat mixture. Bring to a boil stirring occasionally.
  3. Place half of the tortillas in bottom of a greased 9 x 13" baking dish. Spoon half of the beef mixture over tortillas, sprinkle with 1 cup cheese. Repeat layers.
  4. Bake 15 minutes. Serve with sour cream.
