The ingredients needed to make Strawberry cheesecake:
  1. Prepare 400 g cream cheese
  2. Prepare 284 ml double cream
  3. Take 100 g melted butter
  4. Take 300 g digestive biscuits
  5. Prepare 50 g Icing sugar
  6. Prepare Handful thinly sliced strawberries
  7. Take 50 g granulated sugar
  8. Make ready Fresh strawberries for syrup
  9. Make ready Vanilla extract
  10. Prepare 200 ml water

Instructions to make Strawberry cheesecake:
  1. For the base, put digestive biscuits in a food bag and crush to crumbs. Alternatively, you can put it in a blender. Pour the melted butter into the crumbs and mix thoroughly. Transfer the biscuit into a cake tin and cool in the fridge.
  2. Pour cream cheese into a mixing bowl along with the icing sugar, vanilla extract & mix. With an electric hand mixer whipp the cheese while pouring the double cream. Whip until mixture is combined and thick. Pour the mixture into the cake tin with the biscuit base. Smooth the top and start layering the sliced strawberries and store in the fridge.
  3. In a pot on medium/low heat, add in the water, strawberries and granulated sugar and let simmer for 10 minutes. Once the strawberries have cooked and the syrup has thickened, take it off the heat and let it cool down. Using a sieve, filter the syrup from the strawberries. Store in a jug or gravy boat in the fridge and use as sauce for the cheesecake.
