  1. Preheat the oven to 180 degrees.
  2. Melt the butter and chocolate together. I do this over a bain-marie. Boil a pot of water, then cover with a heat-proof bowl. Lower the heat so the water simmers. Place the chocolate and butter in the bowl, keep stirring the melting chocolate to make sure it melts evenly.
  3. When it's melted take the chocolate and butter off the heat and let it cool for 5 minutes. Add the sugar and stir together. Add the eggs and whisk together, then add the flour, baking powder and salt. Whisk together.
  4. Line a 9-inch baking pan. Add the batter and sprinkle a tablespoon of the sugar on top. Bake for 35-40 minutes, about halfway though reduce the heat to 160 degrees. They are ready when you prick the middle and a little bit of the brownie sticks to the fork. Leave to cool in the pan before cutting and serving.
