  1. Make ready All-purpose flour
  2. Take Baking Powder
  3. Take Baking soda
  4. Get salt
  5. Get Curd
  6. Get Milkmaid

Steps to make Malai Cake:
  1. For making the malai take a vessel and add full fat milk to it (1.5kg)
  2. Bring it to a boil.You will see malai coming onto the top of the milk so start mixing it into the milk.
  3. After few minutes add milk made to it and mix it well.
  4. Boil it for 30 minutes until it forms cream in it.
  5. Once the cream is formed turn off the gas and let the mixture cools down.
  6. Now for preparing the cake take all-purpose flour, baking soda and baking powder and seive it altogether in a bowl.
  7. Now take another bowl and add soft butter and sugar.
  8. Whip it well and add curd to it.(make sure the curd shoud be thick)
  9. Whip all the wet ingredients together for about 3-4minutes.
  10. Once it becomes creamy and thick add the dry ingredients within 3slots.
  11. Whip it for 1minute and add vanilla essence to it.
  12. Now fold the cake and pour it in a cake tin.
  13. Bake it in a pre heated oven for about 30 minutes.
  14. Once it is baked take it out and let it cool.
  15. Now take out the cake from the mould and prick it with the help of toothpick.
  16. Now pour one layer of the cream/malai over the cake and let it soak for few minutes.
  17. After few minutes again pour another layer of the malai over the cake.
  18. Garnish it with the chopped dry fruits and refrigerate it for 2-3 hrs so that it gets set properly.
  19. Sprinkle some Kesar before eating.
