Cut veggies into thin slice so that it will cook fast and easily,next coat with the spices add black pepper,salt,oregano and toss it gently add olive oil and again toss gently next take any baking pan greas it with butter and start placing all veggies one by one like placing petals for making flower I am using round so I am giving it flower shape.Next pour diced tomatoes and spread all over on top of veggies you can add in the base also before placing the veggies next add grated cheese.
  2. At last add chopped parsley and olive oil and place the tray in oven or both for 45minutes to one hour so that the veggies gets cooked well and serve this delicious roasted veggies when it is hot you can serve this with rice or peta bread.
