  1. Take 2 large onions
  2. Take 2 stems celery
  3. Make ready 1 knob butter
  4. Make ready 1 glug veg oil
  5. Get 2 large carrots
  6. Prepare 2 large parsnips
  7. Prepare 1 tsp cumin
  8. Prepare 1/2 tsp white pepper
  9. Take 1.5 tsp coriander powder
  10. Take 500 ml boiling water
  11. Get 1 tsp parsley
  12. Prepare 1 tsp mixed herbs
  13. Prepare 1 pinch garlic salt

Steps to make Winter Soup:
  1. Finely chop onions and celery. Softly fry in a pan with the oil and butter.
  2. Dice the root veg, reserve a bowls worth, but add the rest to the pan
  3. Add the water and the rest of the ingredients and simmer for 15min
  4. Place the veg you put aside in a bowl, cover with boiling water and microwave for 3 minutes.
  5. Blend the soup in the pan, and add the bowl of microwaved veg. Cook for a further 10min, adding extra water as required for consistency
  6. Season with salt and pepper to taste. Serve with fresh bread.
