  1. Soak fish maw and dried scallop together for 30 mins.Drain and cut the dried scallop into big strips. Soak black fungus in another bowl for 5 mins. Drain and cut
  2. Remove the skin of winter melon and cut into cubes.
  3. Heat wok and add oil. Stir fry garlic, ginger. Then fish maw and scallop stir fry a little bit longer. Then add in tomato and the rest of the ings. Add 1 cup water and oyster sauce. Cover and simmer until melon is soft.
